My Last List for 2009

A New Year's resolution is a commitment that an individual makes to a project or the reforming of a habit, often a lifestyle change that is generally interpreted as advantageous. (Wikipedia, 2009)

Here are my New Year's resolutions:

1- Be healthier. I have to change my bad eating habits. I did something bad at the end of 2009 which was rekindle my love of Pepsi...not good. And what goes really will with a cup of pepsi....everything...not good.

2-Be active. Yes, my kids keep me very busy but I need to stick to an exercise routine and stick to it for the entire year. (Yes I said stick twice but it needs to
3-Get Organized. To the outside world...well most of the outside world it appears that I am very organized. I feel that I am not. By the time Wednesday comes my home looks like a bomb blew up in it. I need to break some old habits and set new one so my home could look fab more days out of the week.

4- Be more environmentally friendly. I have already change Aly into a gdiaper baby. Next, no more pull up for Alex. I have to cut back on paying for my cup of coffee and bagel in the morning. (Bag, napkins, cup & 2 lids... that adds up at the end of the work week) I have to re-use as much as I can and keep up my good job of recycling.

I think these resolutions go very well with the lists I have made this month.

In 100 days....

Well I did the math again and I'll be 30 in 100 days.

I have already revisited my list for the things I am going to do before I am 30 here.

There are a few things that I want to do that are craft/hobby related. I just can't get myself away from these lists.

1- Begin and complete another 100 Consecutive Days of Pictures. My first completed consecutive days of pictures began Sept. 1, 2007 you can view those pictures here. My second attempt began March 22, 2009 and I failed to complete it.

Here is picture for Day 1:

2- Rejoin Swap bot.
3-Join in on the fun at Boggle Me Thursday.
4-Discover new blogs.
5-Start and finish at least three crochet projects. Drop me a line if you have any good ones. One of those projects I want to do with Becky.
6-Successfully make time for family game night every week. We have a great collection of board games, we have to put them to use.
PS: Have ever mention that my favorite number is three and its multiples.

Tres Leches Cake a la Mom

I made this cake on Christmas Day and everyone enjoyed. Yummy!
Tres Leches Cake
Here's what you'll need for the cake:

1-½ cups all-purpose flour
1 teaspoon baking powder
½ cup unsalted butter (softened)
1 cup white sugar
5 eggs
1 teaspoon vanilla extract
1 cup milk
½ cup sweetened condensed milk
½ cup evaporated milk

Pre heat your oven to 350ยบ

Grease and flour a baking pan
I used a cupcake pan just to make serving easier.
Sift flour and baking powder together and set aside.

Mix butter and sugar together until fluffy.

Add the eggs, vanilla.

Add the flour mixture to the butter mixture a little bit at a time.

Mix well until you have no more bumps.

Pour batter into prepared pan of choice.

Place in oven for 30 minutes.

When cake has finished baking, pierce it with a fork or skewer, and let it cool. (Don't make too many holes. )
Combine the whole milk, evaporated milk and condensed milk and pour over the top of the cooled cake.

Refrigerate for at least 2 hours before serving.

Whipped Cream Topping
You'll need:
1 teaspoon of vanilla
1 cup of sugar
1 1/2 cups of heavy cream,

When the cake is ready to serve, combine cream, vanilla and sugar,

Whip until thick and Spread over top of cake.


PS....My arm got a good workout for this one.

My 125th Post & My Symmetrical Christmas Tree

Well... My symmetrical Christmas tree has finally grown on me. It took placing the gifts under the tree and the cards on the wall behind it for me to like looking at it. For the pass month it has stared at me...telling me ...."I am naked..where are the gifts?" I can't wait until the morning to see the looks on my kiddies faces when they get to make the tree "naked" again.

I am happy to say that I have made it (finally) to my 125th post. I didn't think that I was going to make it. I promise that I will be a good blogger and post at least twice a month in the coming year.

What I have Learned from 2009...

Since I love list so's another one.

2009 was a year of learning. Learning happens every day in every way. Here are the things that I have learned...

1- ...I CAN do it.

2-...asking for help isn't so bad. are a universal language.

4-...if you can't make yourself one can.

5-...I missed going to a college and it felt great to return.

6-...disabilities doesn't mean unable to succeed. and money are too different things.

8-... there are many more ways to arrange my living furniture.

9-...if work was fun, it would be called fun not work. It is up to you to make it fun no matter how tough work is. is too short. Enjoy every moment whether you spent alone or with family and friends.

11-...when you are faced with negativity, it may crack or wrinkle your skin, never let it break your spirit.

12-...karma is real and its a bit**.

13-...taking time for a cup of coffee and to think about what lies ahead is great cups have been very big and frequent in 2009.

What Happened in 2009.

There are a few more weeks before we say good-bye to 2009. Oh man, a lot of things happen in 2009. You know what that means... Mom's going to write a list.

1- I entered and completed a degree plan at Kaplan University online

2- Big Bea became a ballerina

3- Big Al can read and pronounce his name clearly.

4- Little Al turned 1 in Sept. and hit her developmental milestones like a trooper.

5- My sister turned 30 in Jan. (It's my turn in 2010)

6- Roxy is officially the baking GOD! (It's not official until I say... there I said it!)

7- OH MAN... lots of food and celebrations. BBQ Block Party in June, Nay & Rob's house warming in July, Thanksgiving at home and at work and Ariane & Peter's Wedding just last month. Don't forget the countless amount of birthday parties.

8- Many physical challenges. Volleyball, Boot Camp and Running (running is a work in progress).

9- My husband returned from 29 Palms in May.

10- Emotional roller coaster. More downs then ups.

11- I walked for Big Al Easter Seals in June and Breast Cancer in October. (I missed the lung cancer walk, booo)

12- Took my family apple and pumpkin picking for the first time.

13-Attended the USMC ball for the first time.

I will be adding more to the list as 2009 comes to an end.

She said, "You're an Amazing Mother."

Today I had my first formal parent - teacher conference of the school year, for my son. Big Al has greatly improved in every possible way.

Here's some back story...

My middle child, Big Al, is a special needs child. He has PDD. (Google it, I am not explaining it He has received services since Little Al was one week old. Now, he attends Easter Seals Child Development Center here in the Bronx. He has attended this center since November 2008. When you look at the building, you would never think that there is an amazing school inside. It's perfect for children, all abilities. Big Al is one of the lucky ones that get to attend.

Back to today...

Big Al still needs a lot of help with his speech and fine motor skills; just about any three year old does. I bought with me Big Al's PECS book (google that too)to show the teacher that we are actively working at home to get him talking. The teacher said, "We know that you are working with him at home because he retains everything." I wanted to cry when she reach over the table, touched my hand and said "You're an amazing mother." I wanted to cry because it felt good that this professional that doesn't really know me....knows me.

My world = my kids. I do everything within my power (and there's a lot of it) to give them the best life that I can provide. I ask for help and advice from anyone that has any to give. I don't do it to be praised and I don't do it for the thank yous. I do it because they deserve it... I think all kids deserve a person that is devoted to them. Something that is rare today.

I am overjoyed with his progress.

There is a light. Maybe just maybe we can get Big Al out of Special Education very soon.

My Symmetrical Christmas Tree Update

It's been three days and... the "tree" is growing on me. Big Al is only reason why it is growing on me. Every evening he goes up to the "tree" and idenfities the items on the it. "Mommy, LOOK! BELL!" and "MOMMY, LOOK! CAAANDA CANNE!" .....I am sure that by the time Christams Eve is here I will love it.
